This silicone mold by Cedric Grolet for Pavoni features 20 cavities shaped like lemons, each cavity holding 65 ml (2.2 oz). The overall mold size is 300mm x 400mm and it can be used with the Pavoni tart ring PCR-0720CM. It has a non-stick slick upper surface for easy removal of food and minimal cleaning. The pliable silicone allows for easy pushing out of pastry or peeling off frozen products.
The mold is safe for use in convection ovens, static ovens, and microwaves, and is resistant to temperatures from -40C to 280C (-40F to 536F). It is dishwasher safe and freezer safe. For best results, grease before first oven use and wash before initial use. Cleaning is simple with hot water or mild soap, and it can be sanitized by heating in the oven at 150C (302F) for two minutes.
