Chef Rubber Artisan Indigo Blue Cocoa Butter offers a rich indigo blue color for crafting unique chocolate candies, confectionery designs, and transfer sheets. It can be applied directly to chocolate molds or acetate sheets using a brush, airbrush, power sprayer, or finger. The product is packaged in a plastic squeeze bottle for ease of use.
Proper tempering is essential for crystallization and shine. Place the bottle in a 110°F water bath for about 15 minutes until two-thirds of the cocoa butter melts, leaving one-third solid. Shake thoroughly until fully melted and use at 86°F for best results. This cocoa butter is certified OU Kosher Parve and part of the Artisan Collection.
