Chef Rubber Artisan Alabaster White Cocoa Butter is perfect for creating unique chocolate candies, confectionery designs, and transfer sheets. This alabaster white cocoa butter can be applied directly to chocolate molds or acetate sheets using various methods such as brushing, airbrushing, power spraying, or even finger application. It comes in a convenient plastic squeeze bottle for easy handling.
To achieve proper crystallization and shine, the cocoa butter must be tempered. The recommended process involves placing the bottle in a 110°F water bath for about 15 minutes until two-thirds of the cocoa butter melts, leaving one-third solid. Shake the bottle until fully melted and use at 86°F for brilliant results. This product is certified OU Kosher Parve and belongs to the Artisan Collection.
