The Cres Cor 121-PH-1818D Deluxe Proofing and Holding Cabinet is a versatile, non-insulated unit designed for professional kitchens. It functions as both a proofer and a holding cabinet, maintaining the ideal combination of heat and humidity for delicate products or prepared foods. The cabinet features a powerful 2000 Watt heating system that holds foods up to 180°F, while proofing temperatures range from 80°F to 95°F with 95% relative humidity. Its body is constructed from non-corrosive, hi-tensile aluminum for durability and ease of mobility.
This cabinet includes a field reversible Lexan door with a magnetic latch to secure contents during transport. The slanted control panel with an easy-to-read thermometer allows adjustments without opening the door, preserving internal conditions. Heavy-duty 5" swivel casters, two with brakes, provide mobility even when fully loaded. Wire angle ledge pan supports accommodate standard pan sizes on 3" centers, making it a practical choice for commercial food warming needs.
