The Pavoni Cookmatic PIASTRACHOUX02 Cylinder Plates offer a specialized solution for creating perfectly shaped cylindrical pâte à choux. With 30 cavities, these plates feature grooves in relief around the perimeter to allow vapor to escape evenly during baking. The dough expands to form hollow cylinders ready for filling.
Each cavity measures 32mm diameter by 40mm high, with a raw volume of approximately 8 grams and a baked volume of about 4 grams. The plate dimensions are 380mm x 330mm, weighing around 11 kg. Made from non-stick material, these plates are compatible with Cookmatic Special machines for professional pastry production.
