The Martellato Ganache Kit offers precise and easy-to-use frames for creating cremini, ganaches, and multi-layer fruit jellies with consistent weight and height. The kit includes four frames—two 5mm and two 3mm—allowing for customizable layering thickness. For best results, place a silicone mat or acetate sheet under the first frame before pouring the dough.
After pouring the first layer, spread it evenly with the included plastic spatula and wait for it to solidify. Additional frames can be added to achieve the desired thickness. Once set, use a knife to detach the product from the edges and remove the frames. The internal dimensions of the frames are 24cm by 24cm (9.5" x 9.5"), and the spatula measures 300mm by 80mm (11.8" x 3.15").
