The Pavoni Cookmatic PIASTRACHOUX04 Eclair Plates offer pastry chefs the ability to create perfectly shaped pâte à choux with consistent results. Featuring 14 cavities, these plates produce rectangular éclair shapes measuring 30mm x 120mm x 30mm high. The plates have grooves in relief around the perimeter to allow vapor to escape evenly during baking, ensuring the dough expands properly to form hollow shells ready for filling. Made from durable non-stick material, the plates are compatible with both Cookmatic and Cookmatic Special machines, providing versatility in professional kitchens.

Each plate measures 380mm x 330mm and weighs approximately 11 kg. The raw dough volume per cavity is about 23 grams, which bakes down to 11 grams and can be filled with up to 80 grams of filling.
