The Pavoni Violet Velvet Spray by Antonio Bachour is a cocoa butter-based spray designed to create a luxurious velvet effect on frozen desserts. When sprayed onto cold surfaces such as ice creams, mousses, and semifreddos, the cocoa butter crystallizes, producing a distinctive textured finish that enhances the visual appeal of your creations.
For optimal results, the spray should be kept at room temperature (20-25°C) and shaken before use. Apply from a distance of 15-30 cm in thin, even layers while rotating the dessert for uniform coverage. The nozzle should be cleaned with warm water immediately after use to maintain performance and longevity.
