The Cres Cor 121-PH-UA-11D is a non-insulated proofing and holding cabinet designed for commercial kitchens. It serves as a proofer to produce uniformly raised dough and as a holding cabinet to keep prepared foods at serving temperatures. The cabinet features a powerful 2000 Watt heating system that holds foods up to 180°F (82°C) and proofing temperatures between 80°F (26.5°C) and 95°F (35°C) with 95% relative humidity.
Constructed from non-corrosive, hi-tensile aluminum, this cabinet is durable and easy to move. It includes a field reversible Lexan door with a perimeter gasket to minimize heat loss and a magnetic latch for secure transport. Eleven sets of chrome plated wire universal angles accommodate various pan sizes on adjustable 1-1/2" centers. Controls are accessible without opening the door, with a slanted control panel featuring an easy-to-read thermometer and removable power assembly for maintenance.
