Martellato Sugar Dress Confectionery Lace Mix offers the perfect balance of strength and flexibility for creating delicate lace decorations. This paste is ductile yet firm, allowing it to hold together when removed from silicone lace mats while conforming easily to curved surfaces like round cakes. It retains its white color but can be tinted with food coloring for customized designs.
The mix comes in two parts—a powder and a liquid—that you combine with water before spreading on a silicone lace mat. Drying takes 6 to 8 hours at room temperature or can be accelerated by heating in an oven at 158 to 176°F for 10 to 12 minutes. This product contains milk, soy, and wheat and is OU Kosher Certified, making it suitable for various baking needs.
