Our Italian supplier starts by making a simple, standard dough with just two ingredients: organic durum wheat semolina, which they mill themselves, and water. Then, they mimic old-world pasta-making methods by pushing this dough through a bronze die extruder—only, instead of a round opening, this extruder has a triangular opening! The result? Long, thin, triangular Spaghetti. Che fico!
This pasta pairs perfectly with just about any sauce, thanks to the rough exterior created by the bronze die, which results in superb sauce-sticking capabilities
