Regal Annatto Seed offers a distinctive brick-red, triangular seed that imparts a rich yellow-orange color to foods. Commonly used in Caribbean, Latin American, and Filipino cuisines, these dried seeds serve both as a spice and a natural coloring agent in dishes like butter, rice, smoked fish, and cheeses. To extract color, steep 1 to 2 teaspoons of seeds in half a cup of warm oil or water for 10 to 15 minutes, then strain before use. Alternatively, sauté the seeds in hot oil for 2 to 3 minutes until the color releases, then strain.
Annatto seeds have a slightly bitter, earthy, and peppery flavor with a hint of minty aroma. When ground, they can be added to soups or stews or made into a paste for spreading on fish or pork before grilling.
