As a water-based emulsion, it retains its flavor strength during baking because water evaporates more slowly than alcohol, preventing flavor loss. It is ideal for cakes, cookies, sweet breads, frostings, glazes, fondants, fillings, and cream centers. It can also be added to coffee, shakes, pancake, and waffle batter to enhance flavor.

The emulsion is formulated to be the same strength as traditional alcohol-based extracts, allowing a 1:1 substitution in recipes. Use 1 teaspoon of emulsion for 1 teaspoon of extract when baking, and slightly less for no-bake items such as frosting or whipped cream. Due to its high water content, it is not recommended for flavoring chocolate or hard candy.
