Briess midnight wheat malt is made from quality North American red and white wheat that is carefully selected, germinated, kilned, and dry roasted. It provides the same dark brown color characteristics as black malt but without bitterness or astringency. The malt delivers a smooth, slightly sweet roasted flavor and has a beer color rating of 550 SRM.

It is suitable for use as 5-7% of the malt bill in black IPAs, schwarzbiers, and other dark ales and lagers, contributing dark color and smooth roasted flavor. It can also be used at 1-2% for minor color adjustment with little impact on flavor and aroma, or at 2-5% for more color and subtle flavor. This unmilled malt has 6.5% moisture and is packaged in a 50 lb. bulk bag. It is kosher and made in America. Storage in a low-humidity environment below 90 degrees Fahrenheit is recommended.
