These wild-caught crabs are whole and uncooked, shipped refrigerated to preserve freshness. Known as female Sooks, they feature dense, sweet meat with a tender texture that melts in your mouth.

To prepare, steam the live crabs in their shells using a pot filled with equal parts water, vinegar, and optionally beer. Place a rack above the liquid and layer the crabs, seasoning with salt and your signature spices. Steam for 25 to 30 minutes to achieve optimal texture. These crabs develop fat stores called "mustard" due to their adaptation to four distinct seasons, resulting in a heartier texture and a sweet, buttery flavor.
