Sold in a 1/2 bushel case, each contains approximately 2 1/2 dozen crabs, suitable for serving a small group. These wild-caught crabs are partially cooked and shipped refrigerated to maintain quality.

The crabs feature sweet, flaky meat that is tender and melts in the mouth. Preparation involves steaming the par-cooked crabs for 6 to 8 minutes in a pot with equal parts water, vinegar, and optionally beer, using a rack above the liquid. Season with salt and your signature spices, taking care not to dry the meat. These crabs develop fat stores called "mustard" due to their adaptation to four distinct seasons, which imparts a heartier texture and a sweet, buttery flavor.
