These candy baby beets from California Specialty Farms are hand-peeled and turned using the French "tournee cut," forming elongated ovals with equal sides. Harvested prematurely for greater sweetness and tenderness, they feature a bright fuchsia and white swirl pattern and measure 2 1/4" to 3" in length. Their flavor is sweeter and less earthy than red beets, pairing well with soft cheeses, arugula, nuts, and salmon. These beets can also be pickled for cheese boards.
